I “may” be addicted to salted caramel. . . and this recipe doesn’t help, but it is oh so good and easy to make! Caramel has always been a fall treat to me, so today as the rain is falling outdoors, I decided to throw together a batch of brownies. What else is there to do on a chilly, rainy day?
This recipe is made from scratch because I don’t like to buy boxed mixes. I have always found that in all reality, most baked goods are really easy to make with just common household ingredients.
Salted Caramel Brownies
3 ounces vegetable oil
1 cup granulated sugar
2 large eggs
1 tsp vanilla
1/2 cup flour
5 TBS cocoa powder
1/4 tsp. baking powder
1/4 teaspoon salt
1/2 cup chocolate chips
20 unwrapped caramels
1 TBS milk
sprinkle of coarse salt
Preheat oven to 350 degrees. Grease a 9×9 inch glass baking pan.
Mix together oil, sugar, eggs and vanilla until combined. Stir in cocoa powder, baking powder, salt, flour and chocolate chips. Mix only until combined, do not over mix.
Transfer the mixture into the greased baking dish and bake for 20 minutes or until middle section has cooked completely.
During the last five minutes of baking, place the unwrapped caramels and milk in a microwave safe dish. Microwave on high for 1 minute. Stir. Repeat heating at 10 second intervals and stirring until caramel has melted completely.
Remove the brownies from the oven and pour the melted caramel over the top. Sprinkle coarse salt sparingly over the caramel while it is still soft. Place the brownies on a wire rack to cool.
