Summer is starting to dwindle, but we’re still feeling the heat. What better time for a quick summer treat? Today in our kitchen we’re showing you how we make our favorite brownie sundae sandwiches with the new Nestle Toll House Baking Mixes. It’s a new take on a classic kitchen recipe that pairs fresh from the oven brownies with a cool dollop of ice cream and toppings. It’s like a retro brownie sundae – without the spoon or bowl!
Brownie Sundae Sandwiches
Many things in life are expected – things like summer break ending, school beginning again, and the inevitable change in the seasons. Some things are the complete opposite – like last minute meet up’s with friends or getting to go to the grocery store all ALONE on a Saturday afternoon. This weekend I experienced both.
Since these things don’t happen every day, I tend to savor them. On those days when I get to go to the grocery store alone, a 45-minute trip usually turns into two hours as I take the time to read all of the labels or wander the aisles contemplating new recipes that I could make. Of course, this is after grabbing a large cup of my favorite coffee on the way in. You gotta make the most of life, people!
On this trip, as I was wandering the baking aisle at Kroger, a new collection of dry mixes from Nestle caught my eye. Yep, what I had heard was true – Nestle has broken free of the refrigeration section and now has added dry cookie and brownie mixes. They even had one that paired NESTLÉ® BUTTERFINGER® BAKING BITS with brownies! Right off the bat, I noticed these new mixes have no artificial flavors or colors (added colors from natural sources). As I flipped the brownie box over to look at the back, I noticed the three different ways Nestle had found for you to use their product. Right there on the box they give you instructions for making classic brownies, brownie cookies, and one additional way that varied between the boxes. A light bulb went off and I grabbed a box of the Brownies & More with Butterfingers and a box of the Brownies & More with chocolate morsels to drop in my cart.
The next day while we spent the morning swimming in the pool and sitting out in the sunshine with friends, I remembered our treat. I was able to quickly mix up a bowl of fresh brownies cookies per the instructions on the box and popped them in the oven. After giving them a chance to cook and cool, I scooped a dollop of ice cream between the cookies and rolled them in the toppings that were included in the box. I loved how easy it was and it became the perfect summertime treat to share with our friends! Take a look:
A Closer Look at How It’s Done
Here’s a closer look at how we made our brownie ice cream sandwiches, start to finish.
First, the ingredients:
- Box of NESTLÉ® TOLL HOUSE® baking mixes. We used Brownies & More with Butterfingers and a box of the Brownies & More with chocolate morsels.
- 1/3 cup oil
- 2 TBSP water
- 1 egg
- Favorite ice cream
Begin by following the instructions on the back of the box for brownie cookies.
- Preheat oven to 325 degrees. Combine brownie mix with oil, water, and egg in large bowl.
Add half of the included mix-ins to the batter. Set the other half aside.
Scoop brownie cookies onto a cookie sheet. We used an ice cream scoop to get our perfect sized cookies.
Bake 11-13 minutes or until done.
Remove the brownies from the oven and allow them to cool completely.
Once cooled, scoop a dollop of ice cream onto one cookie and top it with another cookie. Roll the sides of the ice cream in the left over mix-ins.
