Some days I simply need something that I can throw together for the kid’s dinner lickidy split. Since I’d rather not grab fast food, this is my newest go-to quick and easy recipe. It tastes like pizza but has a new pasta base twist and takes only a little over 30 minutes to prepare!
It’s Pizza Night!
Let’s get real here. I don’t always have the time or the energy to cook. On some days, I plain-out dread it. When this happens we can either call for take-out or (what’s more likely to happen) I pull out one of my trusted quick and easy recipes. This is one of our favorites.
What do you all want for dinner tonight? A question I probably ask my family a little too often. I really need to get more proactive about planning a weekly menu, but who’s got time? As a busy mother of two, I do the best I can.
Pizza! This is the typical response I receive from the other room. While I too love the taste of delivery pizza, it’s something we only indulge in once in awhile. Definitely not as often as it is requested.
Since my kids love the pizza taste and I love quick and easy dinners, pizza casserole just made sense.
Quick and Easy Pizza Casserole [Recipe]
This recipe is always a big hit in my house. I love that I can pull it together with minimal ingredients and in only around 30-40 minutes time. It’s an all around winner. Here’s how it’s made.
- 1 pkg. ground sausage
- 1 jar marinara sauce
- 1/2 small red onion – chopped
- 1 pkg sliced mushrooms
- 1 cup sliced black olives
- handful of pepperoni slices
- 1 pkg. (8 oz) shredded mozzarella
- 1 (16 oz.) rigatoni pasta
- sprinkle parmesan cheese
Begin by preparing the ground sausage in a skillet over medium-high heat. Continue to cook until sausage is no longer pink. Drain sausage grease.
Meanwhile, place pasta in boiling water and cook until al dente. Remove from heat and drain. Pour cooked pasta into an 8×13 baking dish coated in non-stick cooking spray.
Add cooked sausage to pasta and cover the entire casserole in marinara sauce.
In the same sausage skillet, saute mushrooms and onions until tender. Sprinkle over pasta mixture.
Cover the entire pasta mixture in mozzarella cheese, pepperoni slices, and black olives. Bake for 30 minutes at 350 degrees or until cheese has melted and browned. Remove from heat, allow to cool slightly and serve warm.
