Wow, guys! It has been a pretty full month of birthday party fun in our house! I’m about partied out. However, if all of these parties and get-togethers taught me anything, it’s to simplify, simplify, simplify. Today I wanted to share with you one of the unique ways I simplified our dessert and gave my party guests a few options in flavor by making mini ice cream pies.

Celebrate with Hudsonville Ice Cream
Most, if not all of our celebrations include Hudsonville Ice Cream. When someone brings out the ice cream, we know that means PARTY! So when we started planning our summer get-togethers, I wanted to come up with a way to make bringing the ice to the party a little bit easier.
Obviously, ice cream isn’t the type of dessert that can be easily left out for self-service. It melts. However, I found that by turning the ice cream into individual mini pies I could somewhat make it more party ready. With minimal time, I could create individual cups of self-serve options before the start of the party, serve them easily because they were ready to go, and create several different fun options for guests with just a few added ingredients.
So here’s what I did. I took the already amazing flavors of Hudsonville Ice Cream and mixed them with a few other simple ingredients to create individual mini ice cream pies. These “pies” as I call them (although they aren’t really technically pies) were put together in cups with lids that were ready for grabbing whenever my guests wanted them – just remember to label the lids! Whoops. 🙂
I did for a moment consider creating these in reusable mason jars with lids but the concern over putting glass on ice and having kids at the party made me stick with the disposable cup method. Although, I’m open to suggestions for next time.
Mini Ice Cream Pies | They’re Ready to Go!
This idea came to me rather randomly. As I was looking for ideas on ways to serve up the ice cream at my daughters birthday party, she grabbed a bag of individual travel cups out of the cupboard.
“Hey, what do you have these for mom?”
It’s perfect! I grabbed up the cups, some additional ingredients from my cupboards and started putting it all together. While at first I was attempting to make mini ice cream cakes, because of the whipped cream top, they reminded me more of pies. So there ya go – mini ice cream pies.
Kinda a fun way to serve ice cream, don’t you think? Now maybe we can skip the cake?? Tell me in the comments if you could skip the cake or is cake always a must as well when you celebrate?
Hudsonville Ice Cream | Tiger Traxx | Limited Edition
The first mini ice cream pie I came up with was made by lining the bottom of the cup with crushed chocolate cookie crumbs, which I then topped with a big scoop of Tiger Traxx ice cream. After that, I added a whopping dollop of whipped topping and decorated with chocolate syrup and orange sprinkles.
The lid was then re-added and the treat was placed in the freezer until we were ready to use it later that day.
- Crushed chocolate cookie crumbs – first layer
- Tiger Traxx ice cream – second layer
- Frozen whipped topping – third layer
- Chocolate syrup (or magic shell) – fourth layer
- Orange sprinkles – topping
Hudsonville Ice Cream | Strawberry Shortcake | Limited Edition
The second flavor was made in a similar fashion. First, I added crushed graham cracker to the bottom of my cup. Second, I scooped in the Hudsonville Ice Cream Strawberry Shortcake flavor and again topped it with a dollop of whipped topping. This time, however, I topped it off with sliced strawberries.
- Graham cracker crumbs – first layer
- Strawberry Shortcake ice cream – second layer
- Frozen whipped topping – third layer
- Sliced strawberries – topping
This method could be easily recreated with all of the Hudsonville Ice Cream flavors for even more fun party options. Then, when it’s time to party, simply move them into a cooler with ice and enjoy the fun.
Since ice cream is an important factor to any party in our home, finding ways to have it ready to serve is a must!
