Mmmm….Donuts. I cannot help it, I have a sweet tooth. As much as I try to eat healthy, I just can not resist a sweet tasting treat. Unfortunately, I also passed this trait on down to my kids who have decided to name anything sweet tasting a “Dee”. I think this name came about when Jane was just old enough to start talking and would try to say “Me” whenever she caught mommy sneaking a yummy snack without her. However, her attempts to say “Me” sounded more like “Dee” and the name caught on. To this day, they still ask me to make them “Dee’s” when they want a sweet treat.
Not only am I attracted to anything sweet, I am also attracted to colors. There is something about vibrant blues, greens, reds and yellows that makes my heart sing. So yesterday Dick, Jane and I set to the kitchen to create a fun colored, sweet treat for our breakfast in the morning. Yep, you guessed it. We made homemade donuts using Fruity Pebbles cereal. I know that donuts are probably the worst thing you could eat for breakfast, but hey. . at least I make my own and bake them instead of frying them, right? So in my mind that sort of makes them ok.
This recipe got four thumbs up in our house. Even my husband, who is not much of a sugar person, said they were really good. He also got mad at me for baking them because he now cant resist eating them. 🙂 tee hee. (He could use to gain a few pounds though, so I don’t look so fat standing next to him.) So here is the recipe we came up with, however the only change I would make is not adding fruity pebbles directly to the batter. We did this and the fruity pebbles got a bit chewy after baking. Its best to just use them as a sprinkle.
Fruity Pebbles Donuts
Ingredients:
2 Tbsp Butter – softened
3/4 cup milk
2 tsp vanilla extract
2 eggs
1 tsp salt
1 tsp baking powder
1 tsp baking soda
3/4 cup granulated sugar
2 cups all purpose flour
Frosting Ingredients
1 stick butter
1 bag powdered sugar
milk
Donut Directions:
1. Preheat oven to 325 degrees. Grease donut pan with cooking spray.
2. Begin by mixing all of your wet donut ingredients in a large bowl using a hand blender until well mixed.
3. Add dry ingredients into the wet mixture and continue to blend until well blended.
4. Spoon the mixture into a large plastic bag or frosting bag to easily pipe into the donut mold.
5. Fill each mold 3/4 of the way full using donut mixture.
6. Bake donuts 10-12 minutes or until edges brown and a toothpick comes out clean.
7. Allow your donuts to cool on a wire rack and make frosting using the directions below.
Frosting Directions:
1. Melt 1 stick of butter in a microwaveable dish.
2. Blend in 1 bag of powdered sugar and 1/4 cup milk using a hand mixer.
3. Continue to add milk into the mixture until you obtain your desired consistency. You want it thin enough for your sprinkles to stick, but not thin enough that it will run off the donut.
4. Once your donuts have cooled, spread the frosting on each and sprinkle with fruity pebbles cereal.
Now you can enjoy this sweet and fruity treat that is surely an eye pleaser. They are yummy!
