One of the things that I love doing here at Raising Dick and Jane is creating and sharing fun, new recipes like this one for pesto chicken and potatoes. This simple, five ingredient dish was recently inspired by a little sub restaurant that I visited for the first time the other day and a new recipe creation contest over at the Simply Potatoes website. Yes, sometimes I do get paid to create new recipes (such fun!) and you can too! If you’ve ever wanted to try out creating recipes for money then today is your day! In order to show you how easy it is to create a recipe using only five ingredients I have created my own dish that you can use as an inspiration to start working on your own. My dish is quick, easy and super tasty! Plus, it includes pesto! I just love anything with pesto, don’t you?
PESTO CHICKEN & POTATOES
1 bag of Simply Potatoes – diced potatoes with onion
1 lb. chicken breast
3 TBS. pesto
1/3 c. Italian dressing
2 c. shredded colby jack cheese
Begin by preheating your oven to 400 degrees.
In a large mixing bowl combine your pesto and Italian dressing. Whisk to combine.
Pour your frozen potatoes into the pour and toss to coat. Pour the entire bowl’s mixture into a 13×9″ glass baking dish. Bake for 20-30 minutes or until the potatoes are to your liking. Remember to stir every 10 minutes or so.
While the potatoes are baking, cook your chicken in a large skillet until done. Cut the chicken into medium sized pieces.
Once the potatoes are to your liking, add the chicken to the baking dish and cover with shredded cheese.
Reduce heat to 350 degrees and bake 10-15 minutes more or until the cheese is bubbly.
Remove from oven and serve warm.
