Over the weekend I promised to share with you my homemade recipe for Rocky Road Fudge. I am not one to go back on my promises, so here ya go! This recipe is super easy to make and tastes fabulous, just like the fudge you would get “up north”! I know all of your mouths are watering, so let’s get right into making it. . .
Line a baking pan with parchment paper for easy fudge removal. I like to use a 4 Cavity Mini Loaf Pan to make perfect gift giving sized fudge loafs.
Once the chocolate has melted completely and the mixture has thickened, remove it from the heat and stir in a handful of almonds and marshmallows. Pour the fudge into the loaf pan, top with remaining almonds and marshmallows and set aside to cool. The cooling process should be done at room temperature and can take several hours to completely set properly.
Wrap up the mini loaves for gifts or slice the fudge and eat it! What flavor of fudge is your favorite?
