The other day I shared an image of my homemade guacamole on Instagram. Everyone oohed and ahh’d. I guess you all love it’s green creaminess just as much as I do! Seriously though – I never realized before how easy guacamole is to make fresh. Usually I just buy it ready made; but not this time. This time I bought the avocados, red onion, tomato, cilantro, lime juice and salt – then set aside some time to be alone in my kitchen.
I don’t do it enough – spend time in my kitchen alone. I miss it.
So here I was. I began by washing and slices my avocados. They were perfect inside! Isn’t it SO difficult to get a good avocado sometimes? We definitely hit the jackpot this time though. Green, smooth and perfect! I popped two peeled avocados into a bowl.
Next, I chopped up my red onion and tomato. They got mixed into the bowl, along with my cilantro, and lime juice. Then I started mashing. My favorite part. 🙂
Then, just like that, it was done and I was munching away on a tasty little treat that I felt super proud of making myself. It was pretty darn tasty too! Not quite as tasty as the best guacamole I’ve ever had at the Coronado Springs Resort in Disney – but I enjoyed it all the same. But seriously, if you ever go to Disney – check out the pomegranate guacamole at the restaurant in the Coronado Springs. MMM!
My Homemade Guacamole Recipe
Sorry – no pomegranate’s, but you could add them!
Ingredients
- 3 ripe avocados
- 1 small red tomato
- 1 small red onion
- 1 tsp cilantro – I used a paste.
- 2 teaspoons lime juice
- sprinkle salt
Directions
Slice the avocados in half, remove the hard center, and scoop the soft avocado insides into a bowl. Using a potato masher – mash the avocado until it is the consistency you’d like. I usually leave a few avocado chunks in mine. Next, slice a tomato and onion into small chunks – add to bowl. Add cilantro, lime juice and salt – mix to combine. Â Serve immediately. Refrigerate leftovers (although they won’t last long before turning brown or getting eaten).
Your version looks great! You could try using sea salt or kosher salt instead of regular and add a little pepper. Also because I hate cutting onions I found the best cheat. Buy pre-made fresh salsa from the store, Whole Foods is perfect has the right balance of everything. Cut avocados, add salsa on top, sea salt and black pepper. Then I mix it all together with a fork mashing it along the way so avocados don’t get over worked. And bonus you have left over salsa to eat too. To find perfect avocados should be greenish brown and use the thumb test a little give to it is perfect.
Brilliant! Never thought of using salsa – that would be great for a quick snack.
