The only thing I’ve ever been able to grow in my home garden fruitfully has been squash. My tomatoes never ripen. My peppers always fade. But my summer squash and zucchini – that I can depend on. Year after year; summer after summer we bring these babies in by the basket full. So what are we supposed to do with them all – especially since I have totally given up on attempting to grow anything else? Well, for breakfast we make zucchini muffins, for lunch we make squash quesadillas, and for dinner we make squash spaghetti.
This spaghetti recipe is one of my favorites. Not only because my family loves it and it gets them to eat their veggies, but because it’s easy and I don’t have to cook any meat. It is completely meat free! So are you ready to check it out? Here’s how I do it.
Summer Squash Spaghetti
1 box spaghetti – cooked
2 yellow summer squash – sliced or diced
2 zucchini squash – sliced or diced
1 small white onion – diced
2-4 cloves garlic
Drizzle 1 tbsp of olive oil in a large skillet. Saute’ all of the veggies over med/high heat until tender and slightly browned. Combine with cooked spaghetti and drizzle with 1-2 tbsp of olive oil. Toss to coat. Serve with a sprinkle of Parmesan cheese and ground pepper seasoning.
For me this is a quick, easy to make meal that tastes fantastic. Plus, whenever I can make something meat free that my family likes – that’s a win in my book.
